About the wine
The fertile and picturesque landscapes of Piedmont give us these grapes, from which the winemaker from the Italian winery Astoria conjures up this sparkling wine with refinement and experience. Tasting note
Fresh start with fruity floral notes with a hint of grapefruit and raspberries. Beautifully balanced with pleasant mousse and fine sweetness and acidity.

Vinification
The grape harvest is done by hand in September, followed by soft pressing and static decanting of the must. Primary fermentation takes place in steel tanks at 18°C with selected autochthonous yeasts. The portion of red grapes that vinifies separately and with short maceration gives the wine this color and typical taste, which is preferred by the “classic” winemakers of sparkling wines. It is characterized by a special perfume and is full-bodied. The young wine is stored on the “wine lees” for one month, then filtered and decanted into the autoclaves for the second fermentation. The re-fermentation takes place at 18 °C, always with selected yeasts and lasts about 20/25 days; 40/50 days of aging on the lees. The sparkling wine is then bottled and left to rest in the bottles for a few weeks.
