About the wine
The wine-growing regions of the South African winery Spier Wines stretch across the landscapes where the experienced winemaker produces this white wine. Tasting note
From a delicate straw color with fresh green reflections, the Spier Signature Chardonnay flows into the glass, from which seductive aromas of tangy grapefruit, aromatic lime, yellow apples, sweet banana, ripe pears and a hint of vanilla and fudge emerge. Creamy and full-bodied on the palate with complex layers of exciting fruit nuances. The acidity is pleasantly harmonious and ensures a balanced and soft finish.
Culinary recommendation
Enjoy this wine with family and friends on a summer day and pair it with fried fish with lemon butter and parsley, mussels in cider.
Vinification
Trellis vines between 14 and 22 years old provided the grapes for this wine. They received additional drip irrigation and produced 10 - 14 tons per hectare. The grapes were harvested by hand from selected vineyard blocks and then destemmed, lightly squeezed and pressed. The juice of the individual block selections (some separated and some mixed) was then fermented under temperature control in stainless steel tanks with selected yeast strains. Only the best tanks were selected for the final preparation of the assemblage. The maturation took place on the fine yeast for two months before preparation for bottling. 5% of the wine was fermented in new French oak barrels to add complexity to the wine.
