Tasting note
Precious notes of spring. Flavours of jasmine, citrus notes of lime and orange bowl. Nice flavors of Mediterranean infusions. After a while in the bottle The notes of fennel and anise typical of the region take their place in the glass. Very fresh on the palate and with good volume.
Culinary recommendation
Goes well with fresh salads, seafood, light fish dishes, pizza and pasta.
Vinification
The mantra is “less is more.” Each variety is harvested separately at the perfect time of ripening and ferments in small stainless steel tanks. The musts ferment freely with their own yeasts and without enzymes or other additives. Small paper filtration of the wine before bottling and minimal SO2 adjustment. No clarification, cold treatment, or microfiltration. No maceration with the skins.
