Cava is the classic Spanish sparkling wine, produced using the traditional method of bottle fermentation. Bodegas Marqués de Cáceres has recently been producing a cava brut in the Penedès area, a wonderfully fresh frother with extremely fine perlage and subtle aromas reminiscent of fruit trees and white flowers. Thanks to the long ageing period on the yeasts after bottle fermentation, the wine achieves a good harmony between subtle acidity and fine, restrained melt.
