Tasting note
Presented with a bright golden yellow color and fine, persistent perlage. On the nose, a complex bouquet of ripe stone fruits, citrus zests and white flowers unfolds, accompanied by subtle notes of roasted almonds, brioche and mineral notes. On the palate, it is powerful and elegant at the same time, with a precise acid structure and creamy texture. The complex aromas of yellow fruits, honey and a touch of smoke are accompanied by a subtle saltiness.
Culinary recommendation
The character of Dom Pérignon Vintage 2015 is particularly evident when it comes to seafood such as caviar, king crab and Kaisergarnet. Spicy meat dishes that are prepared with a touch of acidity, such as pork, lamb or duck, are well accompanied by this wine. Exotic fruits, such as kiwi or guava, and the spices of a green curry reveal the stimulating, calming and tactile complexity of this vintage's wine.
Vinification
The second fermentation in the bottle after the Champenoise method gives the champagne its fine perlage. It then matures on the yeast for several years to develop its characteristic complexity, depth and creaminess. It is only after strict selection and tasting that it is approved as Dom Pérignon vintage champagne.
