Tasting note
Intense bouquet of wild berries, followed by bouquet of violets and licorice, followed by cold rose hip tea and scented pipe tobacco. On the dense palate with a creamy texture, fine-grained extract, balanced race and well-trained body. In the aromatic finale, red plums, fine cassis seasoning and delicate Traces of graphite, delicate, robust notes in the background.
Culinary recommendation
Ideal accompaniment to elaborate meat dishes with lamb, game or beef, pies or terrines.
Vinification
Silvio Denz runs this winery with personal advice from Graf Compte de Neipperg and Michel Rolland. After harvesting and selection by hand, the grapes are vinified in Holzcuvier. The subsequent aging takes place over 14 months, half in new and used French barriques.
