Tasting note
Its intense ruby red color with garnet reflections (typical of the Sagrantino grape variety) and its spicy taste with hints of cinnamon, cherry or sour cherry make this wine very full and persistent on the palate, rather tannic with a pleasant bitter aftertaste.
Culinary recommendation
This structured wine goes very well with red meat, game and mature cheeses main courses.
Vinification
This wine is harvested in the second decade of October. The winemaking process begins with a long maceration with the skins of at least three weeks and remains at a temperature of less than 30° during fermentation. During maceration with the skins, the temperature drops to 25°/28° and ends in the last phase at a temperature between 20°/22° until malolactic fermentation. Once the malolactic fermentation is complete, it is transferred to small French oak barrels (barriques or tonneaux). Its refinement lasts a total of 36 months, according to the production rules, which are divided as follows: 12 months in small wooden barrels - barriques or tonneaux -, 12 months in steel, 12 months in the bottle.
