Tasting note
The color is a bright pink, on the nose an intense aroma of delicate notes of white flowers, apple and pear, typical of the aroma of prosecco, mixed with notes of red fruits. The palate is fresh, with a velvety taste and a nice acidity. I have a spicy, dry and lingering finish. Velvety, fresh, well-balanced, lively with an elegant aftertaste and a persistent perlage.
Culinary recommendation
I go perfectly with many dishes, from raw fish appetizers to delicate first and second courses.
Vinification
I am the result of fermentation over about two months in steel tanks under pressure using the Charmat method. Obtained from a blend of Glera (90%) and Pinot Noir (10%) grapes. After gentle pressing, the Pinot Noir grapes are left in contact with the skins until the desired color is achieved. The must then ferments in steel tanks at a controlled temperature of 18°C. The cuvée is then produced with Prosecco wine (90%) and the second fermentation in a steel tank under pressure, lasting about two months.
