Tasting note
The geniuses are rich in Arabic folklore and are best described as volunteer spirits formed from smokeless fire. Geniuses who were able to use their power to create either magic or mischief were popularized in the Tales of Thousand and One Nights. Rosé champagne is traditionally made from two red varieties, namely Pinot Noir and Pinot Meunier. We broke the rules with Silverthorn The Genie. In the embrace of the volunteer spirit of the genius, we opted for something much more courageous and exotic and used Shiraz, an ancient grape variety from Persia. We're happy to announce that the results were pure magic! The genius was read by hand in mid-February in the early hours of the morning. The grapes were pressed whole with a very low recovery rate of only 550 liters per ton - so no bitter tannins are extracted and the juice gets a nice light purple color. The color gradually develops to a salmon pink. In the glass, the genius has a godyellow color with a fine perlage. The bouquet is exotic with a hint of rose water and orange blossoms. On the palate, the genius has fresh raspberries, sherbet aromas supported by a velvety texture, fine mousse and a long-lasting finish.
Culinary recommendation
Great with graved salmon with roasted rye toast, Parma ham with red figs or marinated strawberries with black pepper.
Vinification
The fermentation took place in a stainless steel tank at 15 degrees Celsius. The secondary fermentation took place in the bottle and the wine spent at least 15 months on the lees, after which it was manually shaken and degoged.
