About the wine
This Palomino draws its strength and energy from the calcareous soils in Andalusia. The winemaker from the Spanish winery Cota 45 transforms it into a real treat with a lot of emotion. This discreet Palomino 2019 — UBE Maina is a triumph down to the last drop in the truest sense of the word! Culinary tip from Flaschenpöstler: This Palomino can be served very well with light dishes or an aperitif.
Tasting note
The UBE Maina is more open in the nose than its counterpart UBE Carrascal, which illustrates the difference between the unique Albariza soils. In addition to the expressive fruit, the wine also shows the strong influence of maturation under Flor yeast, which gives it a strong spiciness. Notes of apple, grapefruit and lemon pair with almonds, wet asphalt and bread dough. Full and round on the palate with a well-integrated acidity. A very interesting game on the palate, which makes the wine appear creamy and slender at the same time. Salty notes round off the long finish.
Culinary recommendation
Goes well with tapas, fish, Japanese cuisine and light meals.
Vinification
Cota 45 presses whole grapes, which is gentle and results in a very clear, clean must. Fermentation takes place in used Manzanilla sherry barrels without temperature control. The wine is then aged in the same barrels for 26 months. During several months, a thin layer of yeast, which is called pile, forms. The pile layer protects the wine from oxidation and significantly shapes the taste.
