The vinification took place as follows: The must is cold macerated with the skins at 7°C for eight hours, which enhances the characteristic aromas of the Verdejo. Fermentation takes place at 14-16°C, which helps to preserve and intensify the variety's unique flavor. The wine stays in contact with the fine yeast, which gives it more structure and finesse.
