About the wine
St. Michael-Eppan is a cooperative of 350 winegrowers and is one of the largest and most successful wineries in South Tyrol. Despite its size, quality has been paramount since it was founded in 1907, which is why it is also one of the best wine cooperatives in the world today. The winery has been managed by the outstanding oenologist Hans Terzer since 1977.
Tasting note
In 1989, the course was set for the most famous white wine from the St. Michael-Eppan Winery for the first time. For over 20 years, Sauvignon — Sanct Valentin has found excellent conditions in carefully selected individual vineyards at the foot of the Mendelstock to produce a great top wine with impressive fruit, excellent minerality and persistence. Today, this fine wine is not only the pride of the house and the most important wine in the Sanct Valentine line, but also one of the most awarded white wines in Italy.
Culinary recommendation
Goes well with fried fish such as redfish, sole or char on pepper cream, but also with spicy vegetable risotto.
Vinification
The majority (75%) is fermented in steel tanks, where the wine is aged on the fine lees until the end of April. The rest is fermented and aged partly in tonneau (20%) and partly in large wood (5%).
