To celebrate the 25th 007 movie, Champagne Bollinger produced this limited edition, this 2011 vintage. This unusual year inspired the cellar master to create this unique champagne, which consists exclusively of Pinot Noir from Aÿ. This is the first time that Bollinger has produced a cuvée made from this single, historic cru in which the house has been based since 1829. In Aÿ, the good 2011 harvest produced complex, strong and harmonious Pinots Noirs that set the scene for this character wine. In the glass, the wine shimmers golden with copper accents. The bouquet opens with roasted aromas that turn into honey and yellow fruit nuances, such as mirabelle. The palate is dominated by fruit compote, which is very rich and round. The finish has a refreshing minerality.

The first fermentation takes place in oak barrels, which is now a rarity in Champagne
