Goes well with risotti, pizza, pigeon, not recent cheese.
The grapes, called Troia or Nero di Troia, were probably brought to Gargano by refugees from the town of Troia destroyed by the Achaeans in 1250 BC. A municipality called Troia is located in the province of Foggia. This wine is sincere, tannic, full without being harsh. An important factor in winemaking is the long maceration to 28° C. A discovery among the autochthonous wines of Puglia! Total acidity 5.19 g/l, residual sugar 5 g/l.
