Each harvest cycle resulted in a vinification unit, which in turn was pressed and vinified separately. After extensive light pressing and natural clarification for one night, the various production units are aged in 100% new oak barriques at temperatures of no more than 22°C. After reaching the desired balance between sugar and alcohol content, fermentation was stopped. No malolactic fermentation was carried out.
