The Ossian winery, located northwest of Segovia, was founded in 2005 and has belonged to the family of José Maria Ruiz since 2013. He not only runs an extremely successful restaurant in Segovia, but also the renowned Pago de Carraovejas winery in the Ribera del Duero since the early 1990s. Ossian has a treasure trove of very, very old vineyards. The majority of these Verdejo vines are 100 to 200 years old and thus originate from the time before the phylloxera disaster. The heavily sandy soil of this region prevented phylloxera from advancing and thus protects the vines from infestation even today. The Ossian vineyard, which gives the winery and its main wine its name, is about 150 years old (!) and was only rediscovered by José Maria. After traditional vinification with spontaneous fermentation and subsequent maturation in barriques for about 9 months, an extremely complex wine develops, with a distinct mineral note, with energy and excitement. A versatile food companion and a long-distance runner.
