The Ossian winery, located northwest of Segovia, was founded in 2005 and has been owned by José Maria Ruiz's family since 2013. He not only runs an extremely successful restaurant in Segovia, but also the renowned Pago de Carraovejas winery in Ribera del Duero since the early 1990s. Ossian has a treasure trove of very, very old vineyards. The majority of these Verdejo vines are 100 to 200 years old and therefore date from before the phylloxera disaster. The heavily sandy soil in this region prevented phylloxera from advancing and thus still protects the vines from infestation today. The Ossian vineyard, which gives the winery and its main wine its name, is around 150 years old (!) and was only rediscovered by José Maria. After traditional vinification with spontaneous fermentation and subsequent aging in barriques for around 9 months, the result is an extremely complex wine, with a distinct mineral note, energy and excitement. A versatile food companion and a long-distance runner.
