The wonderfully fresh Creation Chardonnay is slightly more fruity than the other with generous quince, pear and peach aromas and flavors, which are complemented by fresh minerality and a touch of vanilla. The balanced acidity ensures excellent balance and a lively, long-lasting aftertaste.
It goes great with a veal sequin with a porcini mushroom risotto.
A winemaker from Biel in the South African wine paradise - In 2002, the Neuchâtel winemaker Jean-Claude “JC” Martin (formerly Domaine les Grillettes) founded the “Creation Wines” winery near Hermanus with his wife Carolyn, South African with generations of winegrowing ancestors. As a member of the Biodiversity & Wine Initiative, Creation Wines is committed to protecting and preserving natural biodiversity. The hand-picked grapes were gently squeezed and the resulting juice then fermented in barrels at a controlled temperature of 20° Celsius. During the fermentation process, the wine was stirred every two weeks to give the wine a fuller and fuller mouthfeel. After the alcoholic fermentation was complete, the wine matured for 10 months in French barriques, 30% of which was new wood and 70% second-coated wood.
