Recioto is one of the most famous Italian sweet wines. The designation necessarily refers to wines from Veneto that are either red, i.e. from the Valpolicella area, or white and therefore come from the Soave area. Mariano Buglioni harvests some of his grapes in very good years, brings them to the air-conditioned room, where they stay until January, when they are destined for Amarone, or until spring, when Recioto is to be produced from it. They are checked weekly, any rotten grapes are removed, and only when the drying of the grapes has progressed sufficiently does the processing begin, i.e. squeezing, fermenting, pressing the heavily shrunken berries. The wine that is produced in this way is highly concentrated, dense in aromas and just as rich on the palate, with sweetness, acidity and aromatic complexity coming together to create a stimulating game.
