Tasting note
Bright yellow The smell is reminiscent of the sea, salty and rocky, with hints of citrus and intense fruitiness. The taste is exceptionally fresh, lively and light.
Culinary recommendation
It goes well with seafood, grilled fish, sushi, tapas, fresh salads and mild goat and sheep cheeses. Also ideal as a refreshing aperitif on warm days.
Vinification
Manual harvest: Before fermentation, the skins are cold macerated for several hours. Fermentation by local yeasts in stainless steel tanks, pre-evacuated with CO2. After fermentation, the wine is stored on lees for 3 months before being carefully stabilized.
