AC or AOC regions (Appellation d'Origine Contrôlée) are areas of the highest class under French wine law. Here, origin and production method must meet strict guidelines – for Bordeaux wines, this is exactly the case. Their name testifies to their origin in the Bordelais region on the southern west coast of France. Thirteen grape varieties are permitted here, but predominantly Cabernet Sauvignon, Cabernet Franc and Merlot are grown among the red grapes, and Petit Verdot and Sémillon among the white grapes. The climate in Bordelais is influenced by the Gulf Stream, which brings warm water from the Caribbean to northern Europe.The moderate temperatures extend the ripening period of the grapes until October, which gives the fruit more sweetness. However, rainfall is also relatively high in the Bordelais, which can affect the development of the grapes' flavor intensity and spoil entire harvests through rot.
