Tasting note
Aromas of blackberries, cassis and fennel, with lingering layers of forest soil and cedarwood, harmoniously integrated into a concentrated, delicately structured palate.
Culinary recommendation
Perfect with fennel crust sirloin, celery puree, potato fudge, hazelnut beurre noisette and a fig-red wine jus.
Vinification
The grapes were harvested by hand from the beginning of February to the end of March 2016 and yielded an average yield of 8 tons per hectare. Fermentation took place in wooden vats and stainless steel tanks. The 16 to 20-day maceration on the skin resulted in excellent color, concentration and aroma in the wine. Aging for 18 months in new 225 liter French oak barrels.
