About the wine
Billecart-Salmon has been owned by the same family for almost 200 years and is now managed by François Roland-Billecart in the 7th generation. It is a long tradition that is maintained with a lot of love. But prestige and tradition alone are not enough to stand up to the big champagne houses, the quality must be right and that is the case here. Billecart-Salmon cultivates a vineyard area of 30 ha in the best locations with great care. The champagnes are full of nobility, very balanced, full of finesse and elegance. Classic champagnes, wines that ennoble any occasion.

Tasting note
The candidate. Elegant, athletic, bright and clear, apple, citrus, nuts and yeast. Creamy and firm on the palate, witty and demanding, at the end convinces with refreshing acidity and sweet fruit in the long finish. Provocative and noble. A great champagne!
Culinary recommendation
Flaschenpost team recommends this Champagne Blanc de Blancs Grand Cru AOC for aperitifs, crustaceans and oysters.
Vinification
Highly selective reading by hand. Very slow and long fermentation with our own yeasts at cool temperatures and sometimes in used oak barrels. Long maturation on the lees.
