Tasting note
Dark purple with purple reflections. Dark berries, fine roasted notes on the nose. Classically elegant on the palate, fine wood with medium structure and prominent tannins. Quite a long finish with a nice balance.
Culinary recommendation
An elegant accompaniment to double entrecote, Rossini beef fillet, rack of lamb, ripe cheeses or artisanal pies.
Vinification
Stephan Neipperg, the owner of Château Canon La-Gaffelière, has been integrating biodynamic components to care for the approximately 45-year-old vines for several years. On the 19.5 ha, the grapes are harvested by hand and carefully selected. Fermentation takes place in temperature-controlled wooden cuviers. The young wine is then aged for 19 months in 100% new French barriques.
