Tasting note
Very dark purple. Complex, elegant, delicate with scents of blueberries and red fruits. Powerful tannins, full-bodied with a long finish. A masterpiece of winemaking!
Culinary recommendation
Goes well with stews, dark poultry such as duck or guinea fowl, entrecote, beef stroganoff, grilled meat, semi-hard and hard cheeses such as sbrinz or mountain cheese.
Vinification
Hand picking. Temperature-controlled fermentation. Aging for 12-14 months in 50% new French oak barrels.
