Defi Blanc du Valais AOC Les Titans 2022 - Provins

About the wine

More than 4400 cooperative members supply Provins, the largest Swiss wine producer, with the yield from the vineyards between Sierre and Lake Geneva. The company focuses on quality and produces a good 20 from today's 50 Valais grape varieties. The “Les Titans” line was created in honor of all those who drove thousands of kilometers of tunnels into the mountains under extreme conditions. Grape varieties whose aromas are reminiscent of the scents of the mountains are traditionally vinified, but the wines mature in an extremely unusual way: bottled in oak barriques, they are brought to a 300-meter deep tunnel at 1500 m above sea level, where they rest at a constant temperature of 7°C all year round. This unique method was developed by Provins oenologist Luc Sermier and has already been awarded 22 medals worldwide.

Tasting note
The taste of the Défi blanc du Valais white wine is absolutely unique. The blend of Muscat and Pinot Gris impresses with its beautiful balance between round fullness and acidity. The powerful wine gives off wonderful scents of white flowers.
Culinary recommendation
Goes well with fish, crustaceans, exotic dishes.
Vinification
The wine is produced by Provins Valais in a traditional way. The adventure only starts later. As soon as the valuable liquid is filled into barrels, it is carried up the winding road at 1520 meters above sea level to the rock cellar in the mountain. And this is where the mysterious happens. Is it the altitude or the temperature that is constant at 7°C all year round? Is it the rock that surrounds the oak barrels, the total darkness, the lack of vibrations or the total silence that reigns up there that transforms this wine into such an exceptional cru? No one really knows that. What we know exactly, however, is the fact that the taste of this wine is absolutely unique.
