About the wine
Located on the beautiful south bank of the Danube in Wachau, vineyards are cultivated in the best vineyards around Mautern. A mix of young and old vines, together with the hard work of the Eder family, guarantee wines that stand for naturalness, digestibility and drinking pleasure year after year. Manual harvesting, which is carried out as late as possible and in several rounds, is just as natural as giving the wine enough time to develop. Good things just take time!
Tasting note
Spicy nose, dense, complex scent, juicy, fleshy, mild acid structure, extract melt, noble spice with mineral-salty notes, palate-filling finish.
Culinary recommendation
Goes well with fried fish or Wachauer Gitzi shoulder with young vegetables
Vinification
Manual harvest at 21.5°, gentle pressing, must clarification using gravity, temperature-controlled fermentation in stainless steel tanks, aging on fine yeast. Smaragd has been used since 1986 and may only be used for the best and most valuable wines from the Wachau region, which only mature in the sunniest vineyards. They are named after the emerald lizards, which feel particularly at home in the Wachau vineyard terraces.
