Elmsfeuer is a semi-dry rhubarb sparkling wine. Elmsfeuer rhubarb has optimal conditions in the Nordic climate. The temperature differences between cool nights and long bright days give rhubarb a long aging period, which develops a fantastic aroma and a very unique acid profile. The must is fermented on the mash at a low temperature, then the wine is fermented a second time in the bottle. It is stored for at least 9 months before approval. Elmsfeuer is served chilled and is recommended as a varied and exquisite aperitif or as a perfect accompaniment to summer salads or dishes with baby vegetables, asparagus, fjord trout, lobster, air-dried ham, tapas and goat cheese.
