Tasting note
The aromas are as clear as a mountain stream. White flowers, currants, green tea and some brioche. Creamy start on the palate. Dense body with lots of traction, gently flowing, with a slight bitterness on the finish. Totally Burgundian style until the long finish, with a chalky, mineral note. A somewhat sophisticated, close-knit wine for curious people, it needs some understanding. If consumed soon, I recommend carafing it and giving it some breathing space before enjoying it.
Vinification
Grapes from the estate's sole vine with lime and slate, the much lighter soils warm up significantly less than other soils; 8-12 hours on the mash, aging for 9 months in large wooden barrels.
