Tasting note
Making a “Noble Late Harvest” is a tough job, but often the result can be an amazing taste experience. Edelgoud is our attempt to create this elusive elixir and only two barrels were made from Sauvignon Blanc grapes. This wine, with its unique golden color, seduces the palate with seductive aromas of apricot and nectarine, passion fruit, honeycomb, marmalade, apple and dried peach. With a clean, crisp and refreshing aftertaste.
Culinary recommendation
Enjoy this wine with aged hard cheese, blue cheese or creme brulee.
Vinification
Rooted in deep, fine granite-tukulu soils on the slopes of the Helderberg, these vineyards enjoy the refreshingly cool breezes of the Atlantic during the hot summer months, which results in uniform ripening of the berries. Due to the favourable conditions for Botrytis blight, the grapes remained on the vines until mid-March. The grapes were carefully selected for clean Botrytis rot and then picked by hand at 43° Oechsle. The yield was low at around 1 ton/ha. When the grapes came to the cellar, they were macerated for 12 hours and pressed into a stainless steel fermentation tank. The juice was fermented slowly at 14-16 ºC for 12 days. The wine matured in used French oak barrels for 5 months, after which it was slightly finished and bottled.
