About the wine
The roots of Cantina il Cavaliere (The Knight) date back to 1895. Today, the company is run by Roberto and his wife Tiziana Belossi. A modern winery and the necessary expertise from the oenologist team create wines of exceptional quality. The vines cover almost twelve hectares. More than 95,000 bottles are filled annually.
Tasting note
Elegance, finesse, perfect rounding and light residual sugar are the special features of this wine, which is aimed at an attentive and modern target audience. Has fine extracts with velvety soft tannins.
Culinary recommendation
Goes well with red meat, ragout and longer-matured alpine cheese.
Vinification
Hand-picked with optimal ripeness of the grapes. Gentle pressing and destemming every 30 minutes in thermoregulated horizontal vinifiers. Alcoholic fermentation at 26°C to extract the color and optimal tannins. Several processing cycles of the skins daily to obtain soft and elegant tannins. Direct decanting into American oak barriques 1st and 2nd occupancy at the appropriate time. The fermentation batches are treated at certain intervals to perfectly round off and complete the wine. In this phase, malolactic fermentation is also completed. After decanting, the wine remains in the barriques for 6 months. Before bottling, the composition is made in an optimal ratio.
