Vinification
Very selective harvesting of fully ripe grapes by hand and further selection at the table in the cellar. Gentle, gentle pressing, spontaneous fermentation with the vineyard's own yeasts in oak barrels and temperature-controlled steel tanks. Finishing in steel tanks.
