About the wine
The roots of Cantina il Cavaliere (The Knight) go back to 1895. Today, the company is managed by Roberto and his wife Tiziana Belossi. A modern winery and the necessary expertise from the team of oenologists create wines of exceptional quality. The vines cover almost twelve hectares. More than 95OOO bottles are filled annually.
Tasting note
Harmoniously and elegantly structured on the palate with a long and powerful finish. The aging in barriques accentuates the complexity of the wine and gives it roundness and softness. As a young wine, it exudes intense aromas of ripe fruit, with a slight note of vanilla. As a mature wine, it develops more complex notes of sweet tobacco and licorice.
Culinary recommendation
Despite the presence of structured tannins, it is ideal with red meat, ragu and even recent alpine cheese.
Vinification
Harvest by hand when the grapes are optimally ripe. Gentle pressing and desealing every 30 minutes in thermoregulated horizontal vinicators. The mash is then heated to 26°C to extract the color and begin the alcoholic fermentation. Several different cycles of processing the peels to soften the tannins. Processing the yeast to improve the roundness and complexity of the wine and to complete malolactic fermentation. Ageing process of 16 months in barriques after bottling. Before bottling, an optimal blend is made between the various barriques to create a good structure, elegance, velvety and roundness with a light and soft woody note. Bottling without stabilization and filtration, with the option of easy batch formation.
