About the wine
The absolute specialty at Weingut Bietighöfer is the wines from the “Grande Reserve” line, which are spontaneously fermented on their own yeast in new 500 liter wooden barrels, which impress with their authenticity. Young winemaker Stefan Bietighöfer boldly implements new ideas — that is well received and promises a bright future. Wineries were already being cultivated at Weingut Bietighöfer in the 17th century and Stefan Bietighöfer knows the importance of high quality. With passion and diligence, he continues what generations before him have built, showing his keen sense for the best locations and the right measures at the right time. As a member of the “Generation Riesling” association, the young winemaker's direction is clear: He is committed to (quality) Riesling, looks beyond national borders and impresses with authentic wine. Stefan focuses all work steps on environmentally friendly management. Weingut Bietighöfer cultivates around 19 hectares of vineyards. The wines get their typical character from the combination of the mild climate with the clay, sandy and limestone soils. His wines do not have any temperature control during fermentation, no corrective measures are made in the cellar, they are not pre-clarified, but spontaneously fermented in the 500 l tonneaux of the Sylvain tonnellerie from Pomerol, neither embellished nor filtered and they are allowed to mature in the barrel on full yeast until they have fermented.
