Tokara Shiraz Reserve Collection
The wine shows a breathtaking deep purple color with a ruby red rim. The nose leads with notes of ripe blueberries and blackberries mixed with subtle cloves. It is aromas of cedarwood and vanilla that create a lovely scent that supports the hint of violet. The palate is noble and fine with rich dark fruit and a silky mid-palate. The wine leaves an appealing, chalky finish with a hint of pepper spice.
Fantastic accompaniment to lamb chops, venison stew or suckling pig.
The Syrah comes from a single block that consists of 2 clones that produces our expressive Syrah. This block is located on our Tokara farm on the slopes of Simonsberg. The grapes are harvested, destemmed and mashed by hand. 25% whole grapes are added to the mash, macerated cold and then fermented spontaneously. Fermentation takes place in wood fermenters with regular pumping of the mash for better extraction. After malolactic fermentation, the wine matures for 10 months in 20% new French Demi Muids. This is followed by the assemblage and the Syrah is aged in wooden barrels for another 12 months.
