Culinary recommendation
Our recommendation: The perfect drinking temperature for red wine is slightly chilled 10°-12°C.
Vinification
Information about vinification: The wine is fermented using ambient ovens in stainless steel and cement tanks. 75% whole grapes with styles are used, which gives the wine more finesse and tannin. The wine is then aged for 12 months in 500 liter and 3000 liter barrels. Borja works in the cellar with as few interventions as possible and does not use pure yeast, enzymes or other additives. Only before bottling is a small dose of sulfur used to stabilize the wine.
