About the wine
Fabien Jouves, in his early thirties, less than 10 vintages in the cellar, is already considered a star. After studying in Bordeaux, he took over the reins at home, switched to biodynamics and went back to a more traditional, fruity-mineral style. The style in Cahors has become Bordeaux-esque in recent years, and the wines have lost their identity. The success was not long in coming; the soils and therefore also the wines got better from year to year.
Bio
Tasting note
Fresh scent of cassis and blueberries, followed by raspberries and herbs, wet stone. Very complex and complex on the palate. Layers of fruit and herbs and very delicate tannins form the structure of this finely chiselled but powerful wine. A gentle giant! Probably the most beautiful embodiment of this legendary, but unfortunately somewhat forgotten appellation.
Culinary recommendation
Flaschenpöstler-Tipp: B763 AOC passt bestens zu Wildreis, Barbecue und Burger.
Vinification
Fabian's work in the vineyard and in the cellar goes beyond biodynamics. For example, it also injects copper far below the permitted limit. With a lot of hard work, he builds up biodiversity in his vineyards. He is interested in the natural balance - in the soils and in the wines. That's why he doesn't do a green harvest, which he regards as a brutal intervention. The wines are fermented spontaneously when destemmed. Reductive expansion in concrete tanks and used wood, no barrel removal. Minimal addition of sulfur only during bottling.
