Tasting note
The 2017 vintage is the result of strong climatic contrasts that have characterized both concentration and freshness in the wine. After a mild start, 12 days of frost in March resulted in lower yields and higher intensity of the remaining grapes. Spring and early summer were hot and dry, which promoted early maturity as well as structure and density. Rains at the end of August promoted botrytis and vinegar rot, which required strict selection in the vineyard and precise selection decisions — similar to the demanding years of 2005 and 2010. Chardonnays were the ripest since 2000, while healthy Pinot Noirs maintained a balance between maturity and freshness. These contrasts form the characteristic tension and energy of Dom Pérignon Vintage 2017.
Culinary recommendation
The character of Dom Pérignon Vintage 2017 is particularly evident when it comes to seafood such as caviar, king crab and Kaisergarnet. Spicy meat dishes that are prepared with a touch of acidity, such as pork, lamb or duck, are well accompanied by this wine. Exotic fruits, such as kiwi or guava, and the spices of a green curry reveal the stimulating, calming and tactile complexity of this vintage's wine.
Vinification
The identity of Dom Pérignon is rooted in the search for harmony through tension. The wine stands for movement, rhythm and seduction and combines contrasts through balance. The philosophy values precision, selection and maintaining freshness and energy so that the wine can fully develop its complexity and emotional dimension.
