Tasting note
Dark purple with purple reflections. On the nose, red and dark berries, cherries and subtle roasted aromas. Multifaceted on the palate, classic, cedar, noble wood, dark berries, very elegant with a strong structure. Long finale with good potential.
Culinary recommendation
A delicious accompaniment to braised and grilled beef and lamb, game dishes and mature cheese.
Vinification
The grapes are picked and sorted by hand. The gentle pressing is followed by one-third fermentation in steel tanks, cement tanks and wooden barrels for two to four weeks. Each type of grape is fermented separately. The wine is then left to rest in French barriques for 16 to 18 months. The barriques are 30 to 60% new, depending on the vintage.
