About the wine
With the dominant red wine 2021 — De Grendel Shiraz Op Die Berg, nuances and accents are redefined. The winemaker from the South African winery De Grendel grows this wine in the countryside. Culinary tip from Flaschenpöstler: This shiraz can be served very well with roasted vegetables or game.

Tasting note
Ripe maraschino cherries, black fruit pastilles and a promising nose of fresh herbs and undertones of white pepper are complemented by warm Christmas spices such as nutmeg and cinnamon. A wine with luxurious finesse that only gets better with storage.
Culinary recommendation
Enjoy lamb liver, creamy mashed potatoes and a rich onion sauce or a lamb stew with red peppers and olives.
Vinification
High on the Witzenberg mountain range in Ceres, at an altitude of 960 meters above sea level, this unique 'appellation' has the only truly continental climate in South Africa with winter temperatures that are often below freezing point. The cooler temperatures at night and the warmer daytime temperatures during the growing season result in slower ripening and more concentrated fruit. The Ceres grapes show surprisingly cooler climate characteristics compared to other regions of the Western Cape. The grapes were completely destemmed, crushed and then fermented in a closed tank with prolonged skin contact and regular push downs. The malolactic fermentation took place in stainless steel tanks. The wine was then aged in used French oak barrels for 12 months.
