About the wine

Frédéric - Fred - Cossard founded his winery here in 1996, in Saint-Romain in the Côte-de-Beaune, not in the center, not necessarily known for its large terroirs, and it is all the more impressive what he does, what brilliant Burgundy he puts in the bottle, and this requires neither the sulphurization nor the fining of the wines. What counts here is clean wine, low alcohol, low pH values and patience. And unshakable trust, because the wines go through various stages during the long unaffected fermentation process, including those in which they are unaptly oxidative brown, until they naturally clear themselves, take on a healthy color and shine and show their origin, as only a few Burgundians do. And so many look out to Saint-Romain and up to Frédéric Cossard — a star among natural wine growers!
