Tasting note
The grapes for Riesling brut are harvested in October and do not go through a maceration period, but are gently pressed directly. After a long fermentation with wild yeasts, the wines are aged on full yeast in used barrique and stainless steel containers for 6 months. The wine is then bottled for the second fermentation and stored there for a further 24 months.
Culinary recommendation
Ideal as an aperitif, with oysters, light starters, smoked fish, summer dishes or goat cheese. Also great with Asian-inspired dishes with lime and ginger or simply as a stylish companion for festive occasions.
