Tasting note
Strong apricot aromas on the nose and on the palate. Honey-rich richness with ripe tropical aromas, pear drops and lingering nutmeg spice on the palate.
Culinary recommendation
Wonderful accompaniment to desserts, but goes great with baked naartjie baskets filled with ice cream and topped with a caramel dressing.
Vinification
Our noble Spätlese is based on a winemaking heritage that continues today, with the strong family winemaking traditions carried on in every bottle of Chenin d' Muscat. This natural sweet wine is the only wine that still bears the original 1928 label. The vines are located on our Bottelary property. It is a mix of Chenin Blanc bush vines over 50 years old and Muscat de Alexandrie trellis vines over 70 years old. The grapes may become infected with Botrytis before harvesting. For this reason, Muscat is only harvested in May after the first winter rains, where the harvest usually ends at the end of March in Stellenbosch. The grapes are crushed and a certain amount of skin contact is allowed for extraction. The juice is filled directly into barrels and fermented naturally over a period of 2 to 3 weeks. The Chenin Blanc and Muscat ferment separately and the wine is blended after 12 months in the barrel.
