Vinification
Chianti Rufina area, in the municipality of Pontassieve, in Pianottolo. Altitude: approx. 250 m above sea level, exposure: south-south-west, slope 30%. Number of plants per hectare 5680. Fermentation in contact with pomace lasts about 15 days in stainless steel tanks. The ageing takes place in Slavonian oak barrels for 12 months. Acidity 5.09 g/l; dry extract 26.1 g/l.
