Nicola Manferrari is a philosopher and an artist who spares no effort or time in designing even the smallest detail so that he can be uncompromisingly satisfied with the result. And he is not satisfied with himself and his wines very quickly. He gets to the bottom of things, knows each of his vines and the soil on which they stand, knows which wine was made from them in previous years and much more. And so he works in the most complicated way, vinifying each of his plots separately in order to obtain a complex mosaic of various notes and sounds, which he then combines to form an overall picture. Right behind the picturesque Borgo, he has set up a sparkling clean wine cellar in the old walls of his Azienda. The steep slopes of Collio begin immediately behind it, which are probably among the best in this privileged region. The Malvasia grapes are cold macerated for a short period of time before pressing. This accentuates the formation of aromas. Must and young wine are aged in Caratelli's second filling. Depending on the quality of the vintage, Nicola Manferrari bottles some of the barrels as Selezione Italo & Bruno (names of Nicola's parents).
