Vinification
After hand-picking, the grapes were carefully sorted and gently crushed using gravity in temperature-controlled vats. Only the free-run juice was cooled overnight to settle, then fermented in stainless steel tanks with controlled temperatures. The wine rested on fine lees for five months before being blended with a portion aged lightly in oak. That oak-aged part spent five months in 500-liter French oak barrels (third and fourth use). Finally, the wine was filtered and bottled, ready for you to enjoy.
