Tasting note
This Chenin Blanc shows strong lime and some tropical fruit on the nose with a mineral taste of grape fruit and pear drops.
Culinary recommendation
This chenin blanc goes great with dishes such as smoked chicken salad on a warm summer day or thinly sliced carpaccio served on an arugula bed with a lemon olive oil and black pepper dressing.
Vinification
The grapes may have brief skin contact and naturally settle in the tank. 16% are fermented in 3rd and 4th fill French oak barrels and 84% in stainless steel barrels, after which both parts are stored on fermentation yeast for 5 months before being assembled and refined. Fermentation with wild yeasts can take up to 3 months. Stored on fine lees for 5 months, 16% in older French oak and 54% in stainless steel.
