Whitehall Chardonnay by Neil Ellis is a fresh and vibrant white from Stellenbosch, made entirely from Sauvignon Blanc grapes. Its crisp texture and lively balance showcase the producer’s commitment to expressing the unique character of the vineyard with precision and care.

Tasting note

Vinification
The Chardonnay grapes were picked in Elgin starting March 3rd, a bit later than usual, and the harvest went on until March 24, 2022. The grapes had a sugar level of 21–22.5 °Brix, total acidity of 8.5 g/l, and a pH of 3.10. The yield was 6.58 tons per hectare.
These whole grapes were fermented 100% in barrels—35% new French oak barrels (228 liters, fine-grained) and the rest in second- and third-use barrels. About 25% of the wine went through malolactic fermentation. Then it aged for nine months in those French oak barrels before being bottled in January 2023.
