Vinification
The grapes are picked by hand and gently pressed near the vineyards. After temperature-controlled fermentation in stainless steel tanks, malolactic fermentation mainly takes place. More than 150 base wines are used for blending, including at least 30% reserve wines. The second fermentation and aging take place on the yeast in the bottle for at least 24 months, followed by 6 months of rest after disgorgement.
