About the wine
The winemaker from the Italian winery Rivera has absolutely mastered his craft. Elegance and refinement are the characteristics of this red wine, which originates in the fertile and flourishing countryside of Puglia. Do you already know the dominant Cabernet Sauvignon Rupicolo Castel de Monte DOC with the 2016 vintage? If not, it's time! Tasting note
Ruby red with purple reflections. Ripe, red-fruited notes on the nose. Straightforward and honest, wonderfully uncomplicated. On the palate, again, fruity and well-structured, ripe tannins. Medium-long, powerful finish.
Culinary recommendation
Goes well with rustic stews or pasta, aubergine ripiene (stuffed eggplant).
Vinification
The grapes are harvested at the end of September and beginning of October. Maceration takes six to seven days and takes place in steel tanks, while fermentation takes place in cement tanks for five to six days. After complete fermentation, the wine matures for twelve months in glass-lined cement tanks.
